As Lole y Manuel sang in Nuevo día, the air smells like fresh bread. And in our rooms, waking up has that same scent of calm and promise. While the city still sleeps, you might already hear the piano of Bill Evans playing softly at Plácido y Grata—clean, deep, like a gentle touch that hints at what’s to come. The sheets are cool and crisp, sunlight filters in slowly, and every note invites you to linger a little longer in that room that feels like a refuge and an ode to wellbeing.

In Plácido y Grata’s café, the atmosphere comes alive. The aroma of specialty coffee, the colours of homemade pastries, and the first sounds of a city slowly stretching awake create a soft harmony, perfect for a long, unrushed breakfast in Seville. The voices of Ella Fitzgerald or Melody Gardot set the tone for the day’s first conversations.

By midday, the soundtrack gets brighter. At Plácido y Grata Nido, you might hear a gentle bossa nova, a bolero or something by Jorge Drexler. And as the day fades, everything changes. We head up to the rooftop. There’s a small pool to dip your feet in, a glass in hand. You might hear Blue in Green or an instrumental take on Coltrane’s My Favorite Things. The sky turns gold, and the jazz melts into the light, as it only does in the South.

Night descends with a deep voice. In the cocktail bar, every drink has its rhythm: elegant basslines, citrusy notes, melodies that rise and fall. Duke Ellington, Charles Mingus, or another tune in the hands of the jazz trio that, on some evenings, takes over our rooftop with an intimate, immersive performance.
